Mom's Pound Cake 3 sticks butter, softened 1 box confectioner's sugar 1 box sifted flour (use the confectioner's sugar box, or measure 2 3/4 C flour after sifting twice) 6 eggs 1 t. vanilla Cream sugar and butter. Add eggs one at a time while beating. Gradually add the flour. Add vanilla. Mix well. Pour into well-greased and floured tube pan. Bake @300 for 1 hour 10 minutes (or until it's done!)
6 C watermelon, julienned 1 fennel bulb, sliced thin 1/2 - 1 C ripe olives,sliced 1 - 2 C red onion, sliced thin 1 bunch green onion, sliced 1/4 C basil, chiffonade 1-1/2 C Feta, crumbled Balsamic Dressing: 1/4 C lemon juice 1/2 C olive oil 2 T balsamnic vinegar S & P to taste Toss everything, except watermelon and Feta, with dressing. Just before serving toss in watermelon and sprinkle Feta on top.

Watermelon Fennel Salad:
6 C watermelon, julienned
1 fennel bulb, sliced thin
1/2 - 1 C ripe olives,sliced
1 - 2 C red onion, sliced thin
1 bunch green onion, sliced

1-1/2 C Feta, crumbled
Balsamic Dressing:
